Hello everyone!
This is a fairly simple recipe to make yourselves! This is perfect on a hot day. Hardly any heat generated in the kitchen. It is so fresh and tasty!
Here’s what you’ll need:
1 package of rice paper/ 8-12 are used
1 package of rice noodles/ 1/3 of 16 oz. package
2 medium carrots
1 small-medium sized cabbage/ 1/4 is used
1 small package of mushrooms
1 package of tofu/drained and pat dried
sauce of your choosing. (peanut sauce is best imo)
Prep:
Thinly slice (Julienne cut) the carrots.
Thinly slice (Julienne cut) the cabbage.
Clean your mushrooms with a paper towel.
Cut mushrooms into large slices. ,
Place 1/3 of a pack of your rice noodles in a pot of just boiled water for 2-3 minutes.
Then strain and set a side with the other prepped ingredients.
Get a plate of warm water ready to submerge your rice paper.
Thickly slice your tofu into strips. You can saute them with sauce or leave them plain.
Assembling:
Prep all you ingredients in an easy to grab area.
Dip the rice paper into the warm water for 5 -10 seconds fully submerged-
Place on a clean wet surface- cutting board or a damp cotton kitchen cloth.
Place your ingredients onto the rice paper sheet.
Fold the bottom up.
Fold the top down.
Fold the left side in.
Then lightly squeeze/bring it in and continue to roll it up.
Serve with your favorite sauce and enjoy!
You can sub the tofu for shrimp- change the veggies used- add avocado, shiso leaves, cucumber… sub the rice paper for letuce or cabbage leaves.
